This is a regular and a favorite at our house. You can eat it with spaghetti, rice or by itself with a piece of bread.
Beck's Spaghetti Sauce
Ingredients:
chicken stock
1 lb ground turkey or chicken
1 big onion
5 big carrots
2-3 small zucchini
2-3 cloves garlic
1 pepper (any color)
3-4 tomatoes
1-2 cups fresh spinach(less if you don't care for the taste and all if you do)
1 can lentils
1 can tomato soup (optional)
pinch of salt
2-3 tbsp dill weed
1 tbsp parsley
~~~~~~
1. Chop all vegetables finely (I use food processor)
2. Place 1 cup chicken stock, meat, onion and garlic into big pot and cook thoroughly.
3. Add the rest of your vegetable and more chicken stock if needed and cook through.
4. Add lentils and tomato soup
5. Add salt, dill and parsley to taste.
6. Simmer for 30 minutes while spaghetti cooks and serve.
Please feel free to make this into something more to your family's taste. Use the spices that you like to use, add more or less veggies to your liking. Opt out on ones that you don't care for. Leave out the meat and use vegetable stock and make it vegetarian. This is a very healthy recipe and is great for getting your kids to eat their veggies. We use whole wheat pasta, brown rice or homemade bread with this recipe. Enjoy:)
