My hubby loves fish and, unfortunately, I do not. I am going to try a salmon recipe out of the Tosca Reno's Eat Clean Cookbook. I have gotten her magazine (you can find online recipes here) for quite a while but just bought the cookbook last week. I hope for Kent's sake that this turns out really great! I would love for this to bless his socks off...lol;)
Baked Wild Salmon
1 whole wild salmon filet or 6 smaller salmon filets
Juice of 1 fresh lemon
2 tbsp tamari or low-sodium soya sauce
1 whole fresh lemon, washed well and cut into thick slices - about 6 pieces
1 bunch fresh dill
1 bunch scallions, washed and trimmed
1 tsp roasted garlic powder

1. Preheat oven to 350 F.
2. Prepare a large glass baking dish by coating it lightly with olive oil.
3. Place the salmon, skin-side down, in the baking dish.
4. Drizzle with lemon juice and tamari. Place the lemon slices and scallions over the fish. Then, top with dill and roasted garlic powder.
5. Cover with foil and place in the oven.
6. Bake for 12-15 minutes. Don't let the fish overcook. Fish cooks quickly and will be dry if overdone. Keep your eye on the ovem during the last 5 minutes of cooking.
